Khaman Dhokla



Made dhokla today.This recipe is easy and simple.Its like one of those instant breakfast recipes.Most of the ingredients are easily available at home.I have been trying this dish for sometime now but only this time i got the desired result in way of its looks and taste.You can serve this alongside green chutney .This recipe is from the state of Gujarat basically but it is liked by people all over the states of India.

INGREDIENTS
GRAM FLOUR/BESAN-1 STEEL GLASS
CURD/DAHI-1/2 CUP
WATER-AS REQUIRED
SALT-AS REQUIRED
TURMERIC-1 TSP
ENO SALT-1/2 TSP
ASAFOETIDA/HING-A PINCH
LEMON JUICE-AS REQUIRED
GREEN CHILLIES-2-3 SLIT
MUSTARD SEEDS-2 TSP
SUGAR-1 TBSP
OIL 1 TBSP


Recipe- 

Take 1 steel glass gram flour/kadalai Mav

Add 1/2 cup curd,1 tsp turmeric,salt to taste.

Make a dosa like batter adding little water.Rest it for 5 minutes.

Heat steamer /idli stand with enough water .

Grease a vessel with oil..

Mix rested gram flour batter again and add 1 tsp eno or baking soda.Quickly mix them and pour in greased vessel.

Place a stand inside steamer and place this vessel on it.

Let the batter steam for 20-25 minutes.Check with a knife/skewer .If it comes clean your dhokla is ready otherwise let in cook for some more time.remember to keep enough water in steamer/idli. stand.

Once dhokla is ready we shall temper it.








For tempering-
Heat 1 tbsp oil,add 2 tsp mustard seeds, a pinch of asafoetida,chopped or slit green chillies.saute for a minute then add 1 tbsp sugar and 1/4 cup water.Let it come to boil.once boiled switch off gas and add juice of half lemon.pour  this mixture on ready dhokla. Slowly cut sides and demould from vessel.Cut into pieces and serve.It will go well with coriander chutney but I didn't have coriander so I served them with tomato chutney.

Please note:
You can also cut the dholka into pieces and then pour tempering over it.
you can garnish dhokla with grated coconut too.
