Shakkarpare /Sweet Nimki
The market shakkarpare is made very thick but we prepare it like general nimkis and dip in sugar syrup.For making dough you can add butter,ghee or oil .My mom-in -law generally uses butter to make snacks so I used Amul butter to make this dish.You can use butter of any brand.You can also avoid pinch of salt when adding salty butter. It is generally said that little salt enhances the sweetness of any sweet dish.This recipe is simple and easy but you will need patience to fry nimkis in medium heat till brown and crisp.The sugar syrup must be 1 string or less than that but you should not put the nimkis in syrup as soon as sugar dissolves as the nimkis will not remain crisp in such case.It will become soggy and not crispy.
INGREDIENTS
Plain flour/Maida-1 cup
Sugar-1/2 cup
Cardamon/Elaichi-1 or 2
Butter/Oil/Ghee-3-4 tbsp
Apinch of salt (Optional)
Process
1 Take flour /maida in a bowl add 3-4 tbsp butter and pinch of salt.Mix the flour with hand till the butter mixes with the dough.
2 Make a tight dough with 1 cup maida,3-4 tbsp butter,a pinch of salt adding little water at a time.
3 Rest the doughfor 20 minutes -3o minutes .
4 Divide the dough into small parts.
5 Roll out each dough like chappati of medium thickness (not very thin or thick).
6 Cut into shapes of your choice .(Generally the shapes cut are squares and diamonds)
7 Heat oil .
8 Deep fry ready nimkis in medium heat oil till golden brown.
(Do not fry in very hot oil as it will brown outside but will not cook inside)
9 After all nimkis are fried keep aside.
MAKING OF SUGAR SYRUP
1 Heat 1/2 cup sugar with 1/4 cup water.
2 Do the syrup till 1 string consistency.
3 Switch off gas and quickly add fried nimkis.
4 Mix well till all the nimkis are coated with sugar srup.
5 Once cooled store these sweet nimkis in airtight container.
6 These nimkis /khajas /shakkarparas will last for more than a week.
