Cauliflower Paratha (Stuffed Paratha ) With the onset of winter we start getting vegetables like red carrots,fresh cauliflowers, radishes,peas.Besides making curries,vegetable stir fry with them we all love to make stuffed parathas with some of these vegetables. So,today I am sharing the recipe of a stuffed paratha made by cauliflower and carrot.We can enjoy this hot  stuffed cauliflower paratha with pickles,chutneys and curd.It can also be a tasty and quick lunch box recipe for kids and elders. Amla Achaar/Gooseberry Pickle

 Instant Amla ka Achar/ Instant Gooseberry Pickle Today sharing an instant gooseberry pickle also called Amla ka achar. This is an easy recipe.I have learnt this recipe from my mother in law. She uses oil to cook the gooseberries and also soak spices and salt in the same oil.This gives longevity and enhances the taste of the pickle. INGREDIENTS: Amla/Gooseberry-250 g Red chillies - 12 - 13 ( as per your taste) Methi dhana / Fenugreek seeds - 1 tsp Hing  / Asafoetida  - 1 tsp Turmeric - 1 tsp Oil - 6 -7 tbsp refined oil  Salt - to taste Step by step recipe  Grind red chillies and Fenugreek  seeds to coarse powder.    Dry roast red chillies  and fenugreek seeds  in a wok / Kadai. Cook the gooseberries till they are 90 percent cooked and are soft to touch. One can use a fork to check whether it's cooked or not. Potato Cheese Balls

  Potato Cheese Balls  Hi all!! A favourite of kids.You can make this recipe of potato cheese balls with very few ingredients. INGREDIENTS Potatoes - 5-6 Cheese slices  Boiled sweetcorn -1 tbsp  Powdered black pepper- 2 tsp  Red chilli powder - 2 tsp (optional) Garam masala-1 tsp  Flour -1 tbsp  Water - As required Salt to taste Recipe -: Boil potatoes in a pressure cooker.Strain water.  In a bowl mash the potatoes.  Add corn,black pepper,red chilli powder  garam masala,salt to taste. Mix well. Make round balls with the mixture and stuff pieces of cheese or grated cheese inside. Cover well . Make a slurry of flour and water.You can add little salt and pepper to it . Dip the potato and cheese balls in slurry of flour and water mixture . Then roll in bread crumbs and deep fry in oil in medium to high heat. Once golden brown take out in tissue paper . Cucumber Juice

 CUCUMBER JUICE Refreshing, healthy and cool,cool cucumber juice๐Ÿ˜‹ Recipe -  Wash, peel and chop one big cucumber. Put in mixer jar and grind to a fine paste. Then in a serving jug add juice of one lemon, little black salt,pinch of normal salt,powdered sugar 3-4 tbsp. Add chilled water according to your requirements.Mix well. Khichdi

  KHICHURI/KHICHDI (With Moongdal and Rice ) Recipe for Khichuri/Khichdi Take 1:1 ratio of rice and moong Dal.Wash and drain rice.Dry roast moong Dal till you get nice aroma and then wash and drain it too.Heat oil or ghee in a kadai add 1 tsp jeera,1 bay leaf,2 red chillies,2 slit green chillies a pinch of asafoetida.saute for a minute.Add vegetables of your choice -potatoes cut into big cubes,carrot,beans, pumpkin, cauliflower etc .saute.Add 2 tsp turmeric, little salt and cook for 2 minutes   not necessary that the veggies r cooked.Then take a big vessel add half  cooked veggies,rice,Dal and water 3-4 cups ,peas.Add 2 tsp turmeric,1 tsp chilli powder,1/2 tsp sugar(optional),salt to taste.Add 2 tsp ghee and keep the vessel in pressure cooker and cook till 2-3 whistles.When the pressure goes off check the consistency of khichuri if it's not watery add 1 small glass of hot water.Mix and close the lid of pressure cooker.  PUDINA CHUTNEY /MINT CHUTNEY Good day everyone, I am back with another chutney recipe . This recipe is made with mint /pudina and coriander leaves. You can store this recipe for  3-4 days in fridge . This recipe requires few ingredients and tastes good as accompaniment for bread,parathas,rice etc INGREDIENTS Pudina leaves-a handful Coriander leaves - a handful Tomato -2 big Garlic cloves -5-6 Green chillies -2-3 Dry Red chillies -2 Oil -2 tbsp Salt to taste                   Step by step instructions Clean and wash  a bunch of pudina and coriander leaves.           In a pan / kadai add 1 tbsp oil .Saute cloves,red chillies,coriander and pudina leaves and tomatoes one by one and keep aside.  Tutti Frutti Cupcakes (Made with whole-wheat) Hi all!! Today sharing recipe of whole-wheat tutti - frutti cupcakes .I have used regular atta that we use to prepare chappatis/Parathas for this recipe.This recipe requires few ingredients and moreover it takes very less time to prepare too . These cupcakes turned out good .You can prepare these cupcakes for tea time snacks or for kids birthday parties. INGREDIENTS REQUIRED Atta-1&1/2 cups Vinegar-1 tbsp Milk-1/4 cup +1/2 cup Sugar -1 cup Baking soda-1/2  tsp Baking powder-1 tsp Oil-1/4 cup Vanilla essence Tutti frutti-1/4 cup(as per choice) HOW I MADE In 1/4 cup milk add 1 tbsp vinegar and mix well and keep aside for 10 minutes. Whisk powdered sugar and oil in a bowl.Add vinegar & milk mixture, vanilla essence. Sieve atta,soda, baking powder ,a pinch salt 3-4 times and keep aside.
