KHICHURI/KHICHDI

(With Moongdal and Rice )

Recipe for Khichuri/Khichdi

Take 1:1 ratio of rice and moong Dal.Wash and drain rice.Dry roast moong Dal till you get nice aroma and then wash and drain it too.Heat oil or ghee in a kadai add 1 tsp jeera,1 bay leaf,2 red chillies,2 slit green chillies a pinch of asafoetida.saute for a minute.Add vegetables of your choice -potatoes cut into big cubes,carrot,beans, pumpkin, cauliflower etc .saute.Add 2 tsp turmeric, little salt and cook for 2 minutes   not necessary that the veggies r cooked.Then take a big vessel add half  cooked veggies,rice,Dal and water 3-4 cups ,peas.Add 2 tsp turmeric,1 tsp chilli powder,1/2 tsp sugar(optional),salt to taste.Add 2 tsp ghee and keep the vessel in pressure cooker and cook till 2-3 whistles.When the pressure goes off check the consistency of khichuri if it's not watery add 1 small glass of hot water.Mix and close the lid of pressure cooker. After 5 minutes khichuri ready.You can heat 1 tbsp ghee and add jeera to it and give this tadka on khichuri for extra flavour.You can also directly prepare khichuri in pressure cooker .

ASPARAGUS BEANS/BARBATTI SABZI

ASPARAGUS BEANS/BARBATTI SABZI /PORIYAL Preparation Time-10 min Cooking Time -10 -15 min Ingredients Long beans/Asparagus beans/ Barbatti-250 g Dry red chillies-2 Mustard seeds-1 tsp White urad dal-1 tsp Turmeric-a pinch Hing-a pinch Salt-to taste Water-4 tbs Oil-2 tps Coconut-to garnish Process 1) Firstly wash and then finely chop the beans. 2) Heat oil in kadai .After it heats add mustard seeds ,urad dal,red chillies,hing.Saute for half a minute. 3) Add chopped  asparagus beans ,little water and mix well. 4) Add  salt to taste and cover it to cook in steam. 5) Cover the kadai to let the sabzi cook in steam. 6) Keep checking inbetween  to see that the veggies are soft and cooked . 7) Cook for few minutes till the water is soaked .Keep stirring in between. 8) Our sabzi is ready .We can garnish with coconut . 9) Asparagus beans /Barbatti is ready to be eaten with rice,sambar or with dal and roti

KUNDRU FRY

KUNDRU /TINDLI/IVY GOURD FRY Hello friends, The dish I am going to share is called kundru fry .Its a famous side dish in the eastern part of India like West Bengal,Assam,Orissa.It is also my husband's favourite sabji.It can be cooked without much fuss. Preparation time-10 min Cooking time-15-20 min Ingredients Kundru/Ivy gourd-250 gm Oil- 4-5 tbs Turmeric-1 tsp Red chilli powder-2 tsp Everest sabzi masala-2 tsp Mustard seeds-1tsp Salt to taste                                                               Process 1 Cut the kundru/ivy gourd to long thin slices .                                         2  Heat kadai and add oil .                                         3 Add mustard.                                         4 Once the mustard crackles add the sliced kundru vegetables and mix them in oil.                                         5 Then add dry spices like turmeric,red chilli powder,sabji masala.
