Khichdi

  KHICHURI/KHICHDI (With Moongdal and Rice ) Recipe for Khichuri/Khichdi Take 1:1 ratio of rice and moong Dal.Wash and drain rice.Dry roast moong Dal till you get nice aroma and then wash and drain it too.Heat oil or ghee in a kadai add 1 tsp jeera,1 bay leaf,2 red chillies,2 slit green chillies a pinch of asafoetida.saute for a minute.Add vegetables of your choice -potatoes cut into big cubes,carrot,beans, pumpkin, cauliflower etc .saute.Add 2 tsp turmeric, little salt and cook for 2 minutes   not necessary that the veggies r cooked.Then take a big vessel add half  cooked veggies,rice,Dal and water 3-4 cups ,peas.Add 2 tsp turmeric,1 tsp chilli powder,1/2 tsp sugar(optional),salt to taste.Add 2 tsp ghee and keep the vessel in pressure cooker and cook till 2-3 whistles.When the pressure goes off check the consistency of khichuri if it's not watery add 1 small glass of hot water.Mix and close the lid of pressure cooker. Cauliflower Sabji

  Cauliflower Sabji  Good day everyone!! Winter has set in many parts of India and one of the most common veggies  of this season is cauliflower and green peas.Today sharing a healthy version of cauliflower gravy/Sabji to go along side rice, rotis , puris etc. The healthy part is that to make this gravy I used only 1 tsp of oil. The taste was also very good .   Tomato Chutney Good day everyone!! Today sharing another quick recipe of chutney made with tomatoes.Its an easy and quick recipe.It can be prepared in ten minutes .You can prepare this when you are lazy to prepare vegetable side dish or are out of vegetables at home.It goes well with khichuri,stuffed parathas,plain parathas. INGREDIENTS Tomatoes -2-3 Green Chillies -1 or two (slit or chopped into big pieces) Red Chilli powder -2 tsp Turmeric -1 tsp Oil - 2 tsp Mustard seeds -1 tsp Water -As required Salt - As per taste STEP By STEP RECIPE Heat oil. Add 1 teaspoon mustard seeds. Add slit green chillies,chopped 2 or 3 tomatoes, turmeric powder, 2 teaspoon chilli powder,salt to taste. Once the tomatoes get cooked add enough water. Paneer Butter Masala

 PANEER BUTTER MASALA Recipe for 4-5 people INGREDIENTS Paneer -250 g Milk -1/3 cup Cashews -5-6 Onions-2 medium sized Tomatoes-2 medium sized Garlic/ginger -2 tsp Turmeric -2 tsp Red chilli powder-2 tsp Coriander powder -3 tsp Kitchen king/paneer masala -2 tsp Cumin powder-1 tsp Kasuri Methi -1 tsp Fresh cream - 1 tbsp Butter - 1 tbsp Whole spices-  cinnamon, cardamon Oil -2 tbsp or as required Coriander leaves Salt to taste Process : In a mixer jar grind onions,garlic and ginger and cashews. Heat 2 tbsp oil add 2 tsp cumin seeds, 2 cloves,1 small cinnamon,2 small green cardamon.Saute for 1/2 minute and then add ready paste of onion,ginger garlic. Add dry spices one by one. Grind the tomatoes in mixer jar. Once onion paste is cooked add tomato paste .  BITTER GOURD SAMBAR/KARELA SAMBAR Good day friends, Today I am going to share a recipe of sambar made with bitter gourd.This vegetable not everyone's favourite but in our family we all like it .Even kids who generally throw tantrums or are choosy with veggies will enjoy to eat this sambar. Recipe for 4-5 people INGREDIENTS Tuvar Dal /Pigeon peas-1/2 cup Bitter Gourd/Karela -2 (medium sized) Tamarind - a small lemon size (soaked in water for 10-15 minutes) Coconut-2 tbsp grated Tomatoes-1 Turmeric-2 tsp Sambar powder- 2 tbsp Salt to taste Curry leaves Oil-2 tsp Mustard seeds/sarson-2 tsp Asafoetida/hing-1/2 tsp Recipe -: Wash and chop 2 bitter gourd into small pieces. Rinse the lentil/Dal .Add enough water. Add the chopped bitter gourd,a pinch of turmeric and pressure cook for 3-4 whistles. Aloo Masala

 ALOO MASALA/POTATO MASALA Potatoes are a versatile vegetable particularly for vegetarians it's more of a comfort food .Today sharing a very easy recipe of potato masala .It was a great hit with my family when served with vegetable and dry fruit pulao. Recipe for 4-5 people. INGREDIENTS Potatoes - 3-4 (Big) Onions -2 (medium size) Tomatoes -2 Garlic -3-4 Ginger- small piece Curd-1 tbsp Red chilli powder, coriander /dhania powder/cumin /jeera powder,kitchen king masala-2 tsp (or as per taste) Cumin seeds-1 tsp Salt and oil. RECIPE -: Boil potatoes in a pressure cooker upto 2 whistles only .It must not become mushy. Peel the skin and chop into 4 large pieces .Make small holes in them.
