Cauliflower Sabji

 Cauliflower Sabji

Good day everyone!!

Winter has set in many parts of India and one of the most common veggies  of this season is cauliflower and green peas.Today sharing a healthy version of cauliflower gravy/Sabji to go along side rice, rotis , puris etc. The healthy part is that to make this gravy I used only 1 tsp of oil. The taste was also very good .

INGREDIENTS

Cauliflower - 1 medium sized flower around 1/2 kg

Peas - 1/4 cup (I have used fresh peas )

Tomatoes -2 medium sized

Onions - 2 medium sized

Green chillies -3

Garlic -5-6 cloves

Ginger - a small piece

Oil -2 tsp

Cumin seeds / Jeera - 1 tsp

Turmeric - 2 tsp

Chilli powder - 1 tsp

Coriander powder - 2 tsp

Sabji Masala -1 tsp

Water - As needed

Coriander leaves - a small bunch

Salt to taste

Step by step process

Firstly chop cauliflower into big florets .Heat 1 cup water in a vessel and add cauliflower florets and peas (water should dissolve the florets and cook them).Add 1/2 tsp turmeric and 1/2 tsp salt. Close the lid and cook till the cauliflower is soft and cooked .It may take 5-8 minutes. Once the cauliflower is cooked keep it in another vessel.

Next blend onions, tomatoes, garlic cloves and ginger piece and some coriander leaves finely in a mixer jar.

Then in a non- stick pan add 1 tsp oil.Add  1 tsp cumin seeds .Once it crackles add grinded masala of onion and tomatoes.

Now add spices one by one like turmeric powder, coriander powder, chilli powder,Sabji Masala, little salt.

Once the masala gets cooked add boiled cauliflower florets .Add salt to taste.Close the lid and cook for 5 more minutes.

After 5 minutes the masala would mingle with cauliflower and look great.

Add chopped coriander leaves and serve hot with rotis ,parathas , puris or rice .
