Tofu Masala

  TOFU MASALA Hi all, There is always a debate between plant-based protein and animal based protein.So tried making Tofu Masala.The dish came very good .My opinion is both recipes are great and we must include both in our diet . INGREDIENTS Tofu -200 g  Onion -2 Tomato -1 big  Green peas -1 cup (frozen or boiled) Garlic-3-5  Ginger - a small piece  Green chillies - 2-3 Curd 3-4 tbsp  Spices- turmeric,red chilli powder, coriander powder,sabzi masala,garam masala  Fresh cream -1 -2 tbsp Whole spices  Oil -3 tbsp  Water as required Salt to taste Step by Step Instructions Cut the tofu in small pieces and soak them in water to make them soft.Later it will absorb all flavour of gravy and the masalas(spices). In a pan add 1 tbsp oil.Add 2 small chopped onions,1 big tomato,4-5 garlic cloves,a small piece of ginger,2-3 green chillies. Saute for some minutes. Cucumber Juice

 CUCUMBER JUICE Refreshing, healthy and cool,cool cucumber juice😋 Recipe -  Wash, peel and chop one big cucumber. Put in mixer jar and grind to a fine paste. Then in a serving jug add juice of one lemon, little black salt,pinch of normal salt,powdered sugar 3-4 tbsp. Add chilled water according to your requirements.Mix well. Khichdi

  KHICHURI/KHICHDI (With Moongdal and Rice ) Recipe for Khichuri/Khichdi Take 1:1 ratio of rice and moong Dal.Wash and drain rice.Dry roast moong Dal till you get nice aroma and then wash and drain it too.Heat oil or ghee in a kadai add 1 tsp jeera,1 bay leaf,2 red chillies,2 slit green chillies a pinch of asafoetida.saute for a minute.Add vegetables of your choice -potatoes cut into big cubes,carrot,beans, pumpkin, cauliflower etc .saute.Add 2 tsp turmeric, little salt and cook for 2 minutes   not necessary that the veggies r cooked.Then take a big vessel add half  cooked veggies,rice,Dal and water 3-4 cups ,peas.Add 2 tsp turmeric,1 tsp chilli powder,1/2 tsp sugar(optional),salt to taste.Add 2 tsp ghee and keep the vessel in pressure cooker and cook till 2-3 whistles.When the pressure goes off check the consistency of khichuri if it's not watery add 1 small glass of hot water.Mix and close the lid of pressure cooker. Green Moong Gram Laddoos

  Green Moong Dal Laddoos  Good day everyone!! Today sharing another winter food made of green Moong Dal and jaggery. This sweet is full of fibres and proteins .You can prepare this in a bunch and give it to your kids for their healthy development .The jaggery gives a mild sweetness and uplifts the taste too. This recipe requires very few ingredients and all will be easily available at home. INGREDIENTS  Green Moong Dal - 1 & 1/4 big steel glass ( Around 200-220 g) Jaggery - chopped to small pieces 1 big steel glass (used the same glass for measurement) Cashew nuts - 6-7 Cardamon -2 or 3 Ghee / Clarified Butter - 4 tbsp  STEP BY STEP RECIPE Firstly measure 1 and 1/4 steel glass green gram or green Moong Dal and dry roast in a wok or Kadai for 5 - 6 minutes .Be careful not to change the colour or overbrown them.   Cauliflower Sabji  Good day everyone!! Winter has set in many parts of India and one of the most common veggies  of this season is cauliflower and green peas.Today sharing a healthy version of cauliflower gravy/Sabji to go along side rice, rotis , puris etc. The healthy part is that to make this gravy I used only 1 tsp of oil. The taste was also very good .   Healthy  Jaggery-Peanut Laddoos. Good day everyone!! Today sharing another laddoo recipe which needs very few ingredients and can be made in a jiffy.Best part of this recipe is we are not going to use sugar but use healthier jaggery instead.It will be a good  school snack or evening snack for kids or adults with sweet tooth .I have another peanut recipe in my blog which is a traditional one .You can find it in menu with title "Types of Laddoos". Oats Energy Bars

 OATS ENERGY BAR Hi all, Finally tried energy bars .Made this with oats,dry fruits,sesame seeds, cornflakes,jaggery etc.Was very tasty😋 INGREDIENTS Oats (Kellogg's)- 1 big steel glass Jaggery -1 big steel glass Dry fruits - 1 small cup (chopped into pieces like almonds cashews raisins and peanuts).you can also use pistas,melon seeds. Sesame seeds -1 tbsp Cornflakes - a handful Ghee to grease plate How I made it- Dry roast 1 cup/1 steel glass oats.keep aside. Dry roast handfuls of dry fruits chopped to small pieces (I used almonds,cashews,raisins,peanuts).keep aside  Dry roast 1 tbsp sesame seeds.keep aside. Now take 1 cup/glass jaggery broken into pieces. Heat kadai and add jaggery and little water.once the jaggery dissolves strain it. Reheat the strained syrup for 5 minutes.In a bowl of water add little syrup if the jaggery syrup forms thin undissolved strings then switch off gas. Atta and Oats Cake

 EGGLESS ATTA AND OATS CAKE Hi all, After long time tried cake in cooker .Made this cake with atta,oats,milk. The taste was very good. INGREDIENTS -: Atta / Whole-wheat flour -1&1/2 cups Oats - 1/2 cup Milk -1 cup + more Curd - 1/2 cup Custard powder -1 tbsp Oil - 1/2 cup Baking soda -1/2 tsp Baking powder - 1 tsp Vanilla essence - 2 drops  RECIPE-: In a mixie jar grind 1&1/2 cup atta,1/2 cup oats,1 cup sugar(can increase to 1 & 1/2 cup),1/2 cup curd,1 tbsp custard powder,1 cup milk (add little by little) together.keep the batter aside for 7-10  minutes. You can also  add tutti fruitti and nuts like cashews,raisins and almonds to this cake.chop the nuts.In a bowl take handful of nuts and tutti fruitti and add 1/2 tsp atta over it and mix well keep aside. Paneer Butter Masala

 PANEER BUTTER MASALA Recipe for 4-5 people INGREDIENTS Paneer -250 g Milk -1/3 cup Cashews -5-6 Onions-2 medium sized Tomatoes-2 medium sized Garlic/ginger -2 tsp Turmeric -2 tsp Red chilli powder-2 tsp Coriander powder -3 tsp Kitchen king/paneer masala -2 tsp Cumin powder-1 tsp Kasuri Methi -1 tsp Fresh cream - 1 tbsp Butter - 1 tbsp Whole spices-  cinnamon, cardamon Oil -2 tbsp or as required Coriander leaves Salt to taste Process : In a mixer jar grind onions,garlic and ginger and cashews. Heat 2 tbsp oil add 2 tsp cumin seeds, 2 cloves,1 small cinnamon,2 small green cardamon.Saute for 1/2 minute and then add ready paste of onion,ginger garlic. Add dry spices one by one.  BITTER GOURD SAMBAR/KARELA SAMBAR Good day friends, Today I am going to share a recipe of sambar made with bitter gourd.This vegetable not everyone's favourite but in our family we all like it .Even kids who generally throw tantrums or are choosy with veggies will enjoy to eat this sambar. Recipe for 4-5 people INGREDIENTS Tuvar Dal /Pigeon peas-1/2 cup Bitter Gourd/Karela -2 (medium sized) Tamarind - a small lemon size (soaked in water for 10-15 minutes) Coconut-2 tbsp grated Tomatoes-1 Turmeric-2 tsp Sambar powder- 2 tbsp Salt to taste Curry leaves Oil-2 tsp Mustard seeds/sarson-2 tsp Asafoetida/hing-1/2 tsp Recipe -: Wash and chop 2 bitter gourd into small pieces.
