Khichdi

  KHICHURI/KHICHDI (With Moongdal and Rice ) Recipe for Khichuri/Khichdi Take 1:1 ratio of rice and moong Dal.Wash and drain rice.Dry roast moong Dal till you get nice aroma and then wash and drain it too.Heat oil or ghee in a kadai add 1 tsp jeera,1 bay leaf,2 red chillies,2 slit green chillies a pinch of asafoetida.saute for a minute.Add vegetables of your choice -potatoes cut into big cubes,carrot,beans, pumpkin, cauliflower etc .saute.Add 2 tsp turmeric, little salt and cook for 2 minutes   not necessary that the veggies r cooked.Then take a big vessel add half  cooked veggies,rice,Dal and water 3-4 cups ,peas.Add 2 tsp turmeric,1 tsp chilli powder,1/2 tsp sugar(optional),salt to taste.Add 2 tsp ghee and keep the vessel in pressure cooker and cook till 2-3 whistles.When the pressure goes off check the consistency of khichuri if it's not watery add 1 small glass of hot water.Mix and close the lid of pressure cooker. Pudina Chutney / Mint Chutney

 PUDINA CHUTNEY /MINT CHUTNEY Good day everyone, I am back with another chutney recipe . This recipe is made with mint /pudina and coriander leaves. You can store this recipe for  3-4 days in fridge . This recipe requires few ingredients and tastes good as accompaniment for bread,parathas,rice etc INGREDIENTS Pudina leaves-a handful Coriander leaves - a handful Tomato -2 big Garlic cloves -5-6 Green chillies -2-3 Dry Red chillies -2 Oil -2 tbsp Salt to taste                   Step by step instructions Clean and wash  a bunch of pudina and coriander leaves.           In a pan / kadai add 1 tbsp oil .Saute cloves,red chillies,coriander and pudina leaves and tomatoes one by one and keep aside.  Chamcham  (A sweet made of paneer /Chena) Good day everyone!! Today sharing a sweet dish made of paneer .Its a famous Bengali sweet which I have eaten in restaurants many times . So one fine day I thought of trying this sweet in my kitchen. I don't know if I really got that authentic taste or not but I can assure you that these sweets tasted yum .The two highlights of this sweet that I made is that firstly I used toned milk to make paneer/cheese and secondly I made homemade mava with milk powder (this recipe I shall share later).I didn't have dry coconut powder so I used fresh scraped coconut and dry roasted in a Kadai . Green Moong Gram Laddoos

  Green Moong Dal Laddoos  Good day everyone!! Today sharing another winter food made of green Moong Dal and jaggery. This sweet is full of fibres and proteins .You can prepare this in a bunch and give it to your kids for their healthy development .The jaggery gives a mild sweetness and uplifts the taste too. This recipe requires very few ingredients and all will be easily available at home. INGREDIENTS  Green Moong Dal - 1 & 1/4 big steel glass ( Around 200-220 g) Jaggery - chopped to small pieces 1 big steel glass (used the same glass for measurement) Cashew nuts - 6-7 Cardamon -2 or 3 Ghee / Clarified Butter - 4 tbsp  STEP BY STEP RECIPE Firstly measure 1 and 1/4 steel glass green gram or green Moong Dal and dry roast in a wok or Kadai for 5 - 6 minutes .Be careful not to change the colour or overbrown them. Peanut Laddoo

  Healthy  Jaggery-Peanut Laddoos. Good day everyone!! Today sharing another laddoo recipe which needs very few ingredients and can be made in a jiffy.Best part of this recipe is we are not going to use sugar but use healthier jaggery instead.It will be a good  school snack or evening snack for kids or adults with sweet tooth .I have another peanut recipe in my blog which is a traditional one .You can find it in menu with title "Types of Laddoos". INGREDIENTS Peanuts-1 big steel glass Jaggery/Gud -1 or 3/4 big steel glass crushed jaggery Ghee - 1 tbsp (for flavour)(optional) Roasted Sesame seeds -1/4 glass +1 tbsp Powdered Cardamon /ilaichi - 2 tsp Step by step process Measure 1 big steel  glass peanuts.Dry roast them in a kadai/wok.Take out the skin and let cool. Dharwad Peda

 DHARWAD PEDA Tried making the famous Karnataka sweet - Dharwad peda .It tasted very good. Recipe- Make paneer with 1 litre milk.(Full cream is best but I used toned milk) After 10 min take the paneer in a nonstick pan. Add 1 tbsp ghee and 3 tbsp sugar. Keep roasting till the colour of paneer changes to dark brown.It may take 10-12 minutes in low flame . Also Keep adding 3 -4 tbsp milk after some intervals. Once the paneer changes colour let it cool and grind in mixie. Again take the powder in pan and roast for 5 more minutes.Add 3 tbsp milk and 1 tbsp sugar. After 5 minutes make shapes with the mixture when it's warm. Coat the shapes with powdered sugar. The market shakkarpare is made very thick but we prepare it like general nimkis and dip in sugar syrup.For making dough you can add butter,ghee or oil .My mom-in -law generally uses butter to make snacks so I used Amul butter to make this dish.You can use butter of any brand.You can also avoid pinch of salt when adding salty butter.
