Masala Dosa

MASALA DOSA Today's dinner everyone's favourite butter topped Masala dosa with sambar and onion & tomato chutney. Recipe For dosa- Clean ,wash and soak 2 cups boiled rice,1 cup raw rice together .In another vessel soak  3/4 cup urad Dal ,2 tsp methi seeds for 4 hours.After 4 hours grind finely in mixie.Let it ferment for 4 hrs to 5 hrs.Add salt to batter mix well.Add little water to adjust consistency. For masala Heat oil.Add 2 tsp mustard seeds,a pinch of hing,1 chopped onion,1 tsp chopped ginger,2 -3 green chillies chopped,curry leaves,1/2 chopped capsicum,2 tbsp chopped carrots,peas and saute for a while.Add turmeric powder,chilli powder,coriander powder, little salt and cook for sometime.Add 1 chopped tomato.Let it cook.Add 4-5 boiled potatoes,salt to taste, coriander leaves.Mix well.masala ready. Paneer Butter Masala

 PANEER BUTTER MASALA Recipe for 4-5 people INGREDIENTS Paneer -250 g Milk -1/3 cup Cashews -5-6 Onions-2 medium sized Tomatoes-2 medium sized Garlic/ginger -2 tsp Turmeric -2 tsp Red chilli powder-2 tsp Coriander powder -3 tsp Kitchen king/paneer masala -2 tsp Cumin powder-1 tsp Kasuri Methi -1 tsp Fresh cream - 1 tbsp Butter - 1 tbsp Whole spices-  cinnamon, cardamon Oil -2 tbsp or as required Coriander leaves Salt to taste Process : In a mixer jar grind onions,garlic and ginger and cashews. Heat 2 tbsp oil add 2 tsp cumin seeds, 2 cloves,1 small cinnamon,2 small green cardamon.Saute for 1/2 minute and then add ready paste of onion,ginger garlic. Add dry spices one by one. Grind the tomatoes in mixer jar. Once onion paste is cooked add tomato paste . Once the masala is cooked well add little salt to taste.Add milk and little water and let the masala simmer for 3-5 minutes. Once the masala is cooked well add small pieces of paneer . Dharwad Peda

 DHARWAD PEDA Tried making the famous Karnataka sweet - Dharwad peda .It tasted very good. Recipe- Make paneer with 1 litre milk.(Full cream is best but I used toned milk) After 10 min take the paneer in a nonstick pan. Add 1 tbsp ghee and 3 tbsp sugar. Keep roasting till the colour of paneer changes to dark brown.It may take 10-12 minutes in low flame . Also Keep adding 3 -4 tbsp milk after some intervals. Once the paneer changes colour let it cool and grind in mixie. Again take the powder in pan and roast for 5 more minutes.Add 3 tbsp milk and 1 tbsp sugar. After 5 minutes make shapes with the mixture when it's warm. Coat the shapes with powdered sugar. Bitter Gourd Sambar

 BITTER GOURD SAMBAR/KARELA SAMBAR Good day friends, Today I am going to share a recipe of sambar made with bitter gourd.This vegetable not everyone's favourite but in our family we all like it .Even kids who generally throw tantrums or are choosy with veggies will enjoy to eat this sambar. Recipe for 4-5 people INGREDIENTS Tuvar Dal /Pigeon peas-1/2 cup Bitter Gourd/Karela -2 (medium sized) Tamarind - a small lemon size (soaked in water for 10-15 minutes) Coconut-2 tbsp grated Tomatoes-1 Turmeric-2 tsp Sambar powder- 2 tbsp Salt to taste Curry leaves Oil-2 tsp Mustard seeds/sarson-2 tsp Asafoetida/hing-1/2 tsp Recipe -: Wash and chop 2 bitter gourd into small pieces. Rinse the lentil/Dal .Add enough water. Add the chopped bitter gourd,a pinch of turmeric and pressure cook for 3-4 whistles. Add tamarind water to cooked Dal and gourd mixture,add 2 tbsp sambar powder,1 tsp turmeric,add little water to adjust consistency and let it boil for 5-6 minutes. Grind coconut and tomato finely

Aloo Masala

 ALOO MASALA/POTATO MASALA Potatoes are a versatile vegetable particularly for vegetarians it's more of a comfort food .Today sharing a very easy recipe of potato masala .It was a great hit with my family when served with vegetable and dry fruit pulao. Recipe for 4-5 people. INGREDIENTS Potatoes - 3-4 (Big) Onions -2 (medium size) Tomatoes -2 Garlic -3-4 Ginger- small piece Curd-1 tbsp Red chilli powder, coriander /dhania powder/cumin /jeera powder,kitchen king masala-2 tsp (or as per taste) Cumin seeds-1 tsp Salt and oil. RECIPE -: Boil potatoes in a pressure cooker upto 2 whistles only .It must not become mushy. Peel the skin and chop into 4 large pieces .Make small holes in them. Heat 4 tbsp oil and fry the potatoes lightly in batches and keep aside. Now in a mixer jar make a paste of onions, tomatoes, garlic and ginger. Heat 1 tbsp oil or use the remaining oil left after frying potatoes. Add cumin seeds .Once they crackle add grinded paste.saute for a while.Add all dry spices g

MANGO SANDESH

MANGO SANDESH Good    day everyone; This summer I tried to make some new recipes with mangoes.Generally before that I always made mango shakes but this time I tried sandesh with mangoes and believe me they tasted yum.In this recipes I used mangoes chopped into pieces and did not grind or cook them.Its a very simple recipe with mango.Sandesh is a paneer based Bengali dish.With paneer made from 1 litre milk I got 7 pieces of this sweet.                   Ingredients  Milk -1 litre (I used cow's milk) Ripe mango -1 big Almonds/cashews -for decoration Sugar -4 tbsp Cardamon-1 Ghee -1 tsp Recipe -  Make paneer with 1 litre cow's milk. Mash paneer well for 10 minutes. Mix 4 tbsp sugar (acc to ur taste).Mix well. In a non stick pan add 1 tsp ghee. Put this paneer mixture and saute for 3-4 minutes. Paneer must not change colour or texture.It must not become crumbly again. Add cardamon powder and mix well. switch off gas. You can make round balls with the mixture or simply flatt

Homemade Frooti Good day friends, Mango Frooti is one of the favourite summer drinks of young and old alike.It becomes more healthy and yummy when you can prepare this at home without fear of any artificial things or chemical involvement.I tried this recipe and came out good.The taste of this mango Frooti was very familiar with the market one.I tried this another time and I got the same taste.So you can prepare this tasty, chemical free Mango Frooti with very few ingredients at your home.Lets get started. INGREDIENTS Green Mangoes -1 big or 3 small Ripe Mangoes - 2 big or 4 small Sugar-1 small cup sugar (depend) Lemon -1 Water -3-4 cups  RECIPE-: Take 2 ripe mangoes ,2 unripe mangoes. Wash them well . Then peel the the skin of mangoes and grind finely in mixer. In a vessel take the puree.Add 1/2 cup water.1 cup sugar (according to sourness of mangoes.my mangoes were very sour ).Cook for 7-8 minutes till translucent.  Then switch off gas and add juice of one lemon.Add 3 & 1/2

Onion Pakoras

ONION PAKORAS With the advent of rainy season one of the most sought out snacks is pakoras.So, today sharing an evergreen recipe of crispy onion pakoras. INGREDIENTS BESAN/GRAM FLOUR-1 cup Onions-2 big Green chillies-1 Red chilli powder-2 tsp(according to taste) Turmeric-1 tsp Salt-as per taste Curry leaves/Coriander leaves Ajwain/Carom seeds-1/2 tsp Water-as needed Oil-as required Recipe : In a bowl take 1 cup besan. In it add red chilli powder, turmeric,salt, ajwain.Mix well. Add chopped or sliced onions and green chillies.You can avoid chillies if making for children. Add very little water and make a batter of thick consistency. Heat oil.  Take small portions in palm and deep fry in oil in medium heat.Turn sides and cook pakoras till brown and crisp. Serve hot with chutney of your choice or simply tomato sauce. Do try this recipe in your kitchen.
