 ALOO MASALA/POTATO MASALA





Potatoes are a versatile vegetable particularly for vegetarians it's more of a comfort food .Today sharing a very easy recipe of potato masala .It was a great hit with my family when served with vegetable and dry fruit pulao.

Recipe for 4-5 people.

INGREDIENTS

Potatoes - 3-4 (Big)

Onions -2 (medium size)

Tomatoes -2

Garlic -3-4

Ginger- small piece

Curd-1 tbsp

Red chilli powder, coriander /dhania powder/cumin /jeera powder,kitchen king masala-2 tsp (or as per taste)

Cumin seeds-1 tsp

Salt and oil.

RECIPE -:

Boil potatoes in a pressure cooker upto 2 whistles only .It must not become mushy.

Peel the skin and chop into 4 large pieces .Make small holes in them.

Heat 4 tbsp oil and fry the potatoes lightly in batches and keep aside.

Now in a mixer jar make a paste of onions, tomatoes, garlic and ginger.

Heat 1 tbsp oil or use the remaining oil left after frying potatoes.

Add cumin seeds .Once they crackle add grinded paste.saute for a while.Add all dry spices given above and let the masala get cooked .Once masala gets cooked add whisked curd and cook for 4-5 minutes.


Then add boiled and fried potatoes.Add salt to taste .Mix well .Close the lid and cook for 3-4 minutes.

Add water as required for gravy (around 2 cups) and close the lid and cook for 4-5 minutes more .Switch off gas.You can add chopped coriander leaves and serve this potato masala hot with rice,pulao, pooris, parathas etc.
