TOMATO PICKLE /TOMATO THOKKU

                             


                                              

When you get tomatoes in abundance in market you can prepare this easy to make pickle which will last longer too.Its a South Indian preparation in the category of chutneys/pickles called ''Thokku"'.This recipe I am sharing today is óf my mother -in-law .This pickle will go well as side accompaniment for dosas,idlis,adai,upma,parathas ,rice etc. The best part is you can store this in fridge for about a month .So,lets get started.

INGREDIENTS
Tomatoes -5
Whole Dry Red Chillies-1 cup
Fenugreek seeds-1 tbsp
Mustard seeds-2 tbsp
Tamarind-a small piece
Salt -to taste
Oil-2 -3 tbsp
Asafoetida /Hing -a tsp

STEP BY STEP PREPARATION WITH PICTURES

In a wok /kadai dry roast red chillies,fenugreek seeds,mustard seeds separately for 2-3 minutes.


           Now powder dry roasted  red chillies and fenugreek seeds in mixer grinder.

                                     
                                       


                                Now powder dry roasted mustard seeds in mixer grinder.

  Next grind tomatoes and a piece of tamarind in mixer grinder to make a paste.




   In a wok /kadai heat oil.Add a tsp of mustard seeds .After it crackles add tomato paste.


                                                        Add a pinch of asafoetida.



                                                            Add salt to taste.
                                          

                                          

                       
                                       Let the mixture boil till it thickens and oil start leaving sides.
                                          

                                         


                      Now the mixture has reduced and has got cooked well.Switch off gas.


                                                                   Add mustard powder .



                                   Add chilli powder according to sourness of tomatoes.


                                                         Mine only this much left.

                                              Mix all together well.

Once cooled store in a container.It will stay good for a month if kept in fridge.

                       You can serve this with different varieties of dosas,idlis,parathas ,rice etc.
