Today I will be sharing the recipe of Vadapav, a famous street food of Mumbai,Maharashtra.I have tasted this dish when my husband got it for us during one of his official visits there.We were really happy to taste it .It was delicious to taste with subtle and mild flavour.I then searched through the internet and after going through many recipes I finally settled on the recipe which I am sharing today.I cannot vouch for the authencity of the recipe but I can atleast confidently say the Vadapav will be as good as the original Mumbai one .The chutney powder too has many versions but I opted for this one because its easier to make and goes well with the vadapav and also tastes good.The green chutney I will be sharing is also a simple one which goes well with the vadapav.Hope this dish will be foolproof for beginners in cooking or for people who are trying for the first time.

INGREDIENTS
BOILED POTATOES -1/2 KG
GINGER/GARLIC-GRATED - 2 TSP
GREEN CHILLIES-5-6
LEMON JUICE-5-6 DROPS
GRAM FLOUR /BESAN-1 CUP
CORIANDER LEAVES - A BUNCH
TURMERIC-1 TSP
RED CHILLI POWDER -1 TSP
OIL -2 TBSP +FOR FRYING
ASAFOETIDA /HING -A PINCH
MUSTARD SEEDS -2 TSP
SALT-TO TASTE

   STEP BY STEP PREPARATION PROCEDURE WITH PICTURES


Heat oil .Add 2 tsp mustard seeds and asafoetida/hing.Add green chillies andgrated ginger garlic.




Saute for a minute then add turmeric.



Peel the skin of boiled potatoes and mash them well.


  Now  add this mashed potatoes to the wok / kadai .Add salt to taste and some chopped coriander leaves.




             Mix well .Switch off gas .Add 5-6 drops of lemon juice.Mix well and let it cool.



 Prepare the batter with gramflour /besan ,red chilli powder,turmeric and salt and little water.




Ready the batter as we prepare for bonda /bhajji.The consistency of batter should not be too thick nor too watery.


To prepare batata /potato vada make round balls of potato mixture.


                                      

  Now roll the potato balls/patties in besan batter and deep fry in oil.







 Fry the potato vadas both sides in medium flame.




    MAKING OF CHUTNEY POWDER

 Pour some besan batter in hot oil and make fritters.



Once these fritters cool take in mixi jar alongwith 3-4 cloves of garlic ,1 tsp red chilli powder,salt and blend them into a coarse powder. (Here you can also add roasted peanuts for nutty taste.)





                                                               Chutney powder is ready !!


 MAKING OF GREEN CHUTNEY

In a mixer- grinder blend a bunch of coriander leaves along with 3-4 green chillies,salt,1/2 tsp lemon juice and little water.


                Green Chutney is ready .


  Fry 2-3 green chillies in little oil to serve along with vadapav.You can skip this if preparing for kids.

 
NOW ASSEMBLING /
SERVING THE PAV/BUN

Slit the pav /bun in middle .Add little chutney powder and green chutney.Keep the potato vada in between the bun/pav.Serve immediately alongwith green chutney and chutney powder.
