Potato Cheese Balls

  Potato Cheese Balls  Hi all!! A favourite of kids.You can make this recipe of potato cheese balls with very few ingredients. INGREDIENTS Potatoes - 5-6 Cheese slices  Boiled sweetcorn -1 tbsp  Powdered black pepper- 2 tsp  Red chilli powder - 2 tsp (optional) Garam masala-1 tsp  Flour -1 tbsp  Water - As required Salt to taste Recipe -: Boil potatoes in a pressure cooker.Strain water.  In a bowl mash the potatoes.  Add corn,black pepper,red chilli powder  garam masala,salt to taste. Mix well. Make round balls with the mixture and stuff pieces of cheese or grated cheese inside. Cover well . Make a slurry of flour and water.You can add little salt and pepper to it . Dip the potato and cheese balls in slurry of flour and water mixture . Then roll in bread crumbs and deep fry in oil in medium to high heat. Once golden brown take out in tissue paper . Tofu Masala

  TOFU MASALA Hi all, There is always a debate between plant-based protein and animal based protein.So tried making Tofu Masala.The dish came very good .My opinion is both recipes are great and we must include both in our diet . INGREDIENTS Tofu -200 g  Onion -2 Tomato -1 big  Green peas -1 cup (frozen or boiled) Garlic-3-5  Ginger - a small piece  Green chillies - 2-3 Curd 3-4 tbsp  Spices- turmeric,red chilli powder, coriander powder,sabzi masala,garam masala  Fresh cream -1 -2 tbsp Whole spices  Oil -3 tbsp  Water as required Salt to taste Step by Step Instructions Cut the tofu in small pieces and soak them in water to make them soft.Later it will absorb all flavour of gravy and the masalas(spices). In a pan add 1 tbsp oil.Add 2 small chopped onions,1 big tomato,4-5 garlic cloves,a small piece of ginger,2-3 green chillies. Saute for some minutes. Cucumber Juice

 CUCUMBER JUICE Refreshing, healthy and cool,cool cucumber juice😋 Recipe -  Wash, peel and chop one big cucumber. Put in mixer jar and grind to a fine paste. Then in a serving jug add juice of one lemon, little black salt,pinch of normal salt,powdered sugar 3-4 tbsp. Add chilled water according to your requirements.Mix well. Khichdi

  KHICHURI/KHICHDI (With Moongdal and Rice ) Recipe for Khichuri/Khichdi Take 1:1 ratio of rice and moong Dal.Wash and drain rice.Dry roast moong Dal till you get nice aroma and then wash and drain it too.Heat oil or ghee in a kadai add 1 tsp jeera,1 bay leaf,2 red chillies,2 slit green chillies a pinch of asafoetida.saute for a minute.Add vegetables of your choice -potatoes cut into big cubes,carrot,beans, pumpkin, cauliflower etc .saute.Add 2 tsp turmeric, little salt and cook for 2 minutes   not necessary that the veggies r cooked.Then take a big vessel add half  cooked veggies,rice,Dal and water 3-4 cups ,peas.Add 2 tsp turmeric,1 tsp chilli powder,1/2 tsp sugar(optional),salt to taste.Add 2 tsp ghee and keep the vessel in pressure cooker and cook till 2-3 whistles.When the pressure goes off check the consistency of khichuri if it's not watery add 1 small glass of hot water.Mix and close the lid of pressure cooker. Pudina Chutney / Mint Chutney

 PUDINA CHUTNEY /MINT CHUTNEY Good day everyone, I am back with another chutney recipe . This recipe is made with mint /pudina and coriander leaves. You can store this recipe for  3-4 days in fridge . This recipe requires few ingredients and tastes good as accompaniment for bread,parathas,rice etc INGREDIENTS Pudina leaves-a handful Coriander leaves - a handful Tomato -2 big Garlic cloves -5-6 Green chillies -2-3 Dry Red chillies -2 Oil -2 tbsp Salt to taste                   Step by step instructions Clean and wash  a bunch of pudina and coriander leaves.           In a pan / kadai add 1 tbsp oil .Saute cloves,red chillies,coriander and pudina leaves and tomatoes one by one and keep aside. Once they cool take them in mixer jar. Add salt and grind  to a fine paste.        Heat 1 tbsp oil in same pan/ kadai.Add mustard seeds,a pinch of asofoetida (hing).Once the mustard seeds crackle add the grind paste and cook for 3-4 minutes. Pudina chutney/Mint chutney is ready.                    

Instant Jalebi

  Instant Jalebi  I had made these juicy jalebis long back.Just thought of updating it now.No doubt it was very tasty.😋I had tried it before many times but met with failure but this time it turned out very good.Its not that tough if we maintain right consistency of batter. INGREDIENTS Plain flour/Maida -1/2 cup Curd -1/4 cup  Baking Soda -1/4 teaspoon Water -as required  Sugar - 1&1/2 cup  Orange colour - a pinch (optional)  Lemon juice - 1 teaspoon  How I Made   In a bowl take 1/2 cup maida.  Add1/4 cup curd to it. Also add 1/4 tsp baking soda.  Mix all well together.   Now make a batter adding very little water. Rest the batter for 15 min.  Preparing Syrup  Take 1&1/2 cup sugar .  Let it boil for sometime.  Make 1 string consistency syrup.  Add colour and 1 tsp lemon juice. Then fill this batter in sauce bottle and make Jalebis and fry them in flat bottomed Kadai . Once they are done  then  immediately dip them in ready sugar syrup.   Soak them for few seconds and take  out.

Tutti Frutti Cupcakes

 Tutti Frutti Cupcakes (Made with whole-wheat) Hi all!! Today sharing recipe of whole-wheat tutti - frutti cupcakes .I have used regular atta that we use to prepare chappatis/Parathas for this recipe.This recipe requires few ingredients and moreover it takes very less time to prepare too . These cupcakes turned out good .You can prepare these cupcakes for tea time snacks or for kids birthday parties. INGREDIENTS REQUIRED Atta-1&1/2 cups Vinegar-1 tbsp Milk-1/4 cup +1/2 cup Sugar -1 cup Baking soda-1/2  tsp Baking powder-1 tsp Oil-1/4 cup Vanilla essence Tutti frutti-1/4 cup(as per choice) HOW I MADE In 1/4 cup milk add 1 tbsp vinegar and mix well and keep aside for 10 minutes. Whisk powdered sugar and oil in a bowl.Add vinegar & milk mixture, vanilla essence. Sieve atta,soda, baking powder ,a pinch salt 3-4 times and keep aside. Now add  dry ingredients to wet ingredients by cut and fold method slowly. Add milk to adjust consistency. Add tutti frutti in atta and keep aside.(thi
