UPPUTU /PURANPOLI/BOLI

Hi all,
Once again happy to share a traditional sweet recipe. Its called Upputu,Boli,Puran Poli in different parts of our country. Its a chappati like dish with coconut, dal, jaggery stuffing. This recipe is generally prepared during festivals like Bhogi Pandigai(Pongal time),Ganesh Chathurthi etc. This is a simple recipe which can be made easily with basic and minimal ingredient required,.Generally for preparing dough 1:1 ratio of wholewheat and plain flour is taken but this time we have prepared this with plain flour only. You can prepare this recipe by taking equal portion of wholewheat and plain flour.

INGREDIENTS

Plain Flour- 2 cups
Turmeric- 1 tsp
Oil-4 tbsp
Salt-a pinch
Chana dal -1 cup
Jaggery-1 cup
Coconut -1 cup
Cardamon/Elaichi-2-3
Ghee-as needed

STEP BY STEP PREPARATION WITH PICTURES

Prepare a dough with plain flour ,turmeric, oil ,a pinch of salt and water.Apply oil and let it rest for 2 hrs.

For stuffing - Pressure cook chana dal till soft and cooked.

Now in a mixture grind coconut and boiled lentil/dal  coarsely.

Now take 1 cup jaggery in a kadai /wok.Add little water.

Once the jaggery melts filter it for impurities.

Reheat the filtered jaggery and add grinded coconut and dal mixture.Cook till the mixture thickens. This process will take 10 to 15 minutes.Keep the gas flame in medium heat.

Once the mixture thickens add cardamon powder.Switch off the gas and let the mixture cool.

                                        Stuffing ready.

Take a small portion of dough and with the help of palm spread it on a sheet. Here I have used plastic sheet but traditionally banana leaf is used,Add a small portion of stuffing and close the dough and roll  into a round shape like  roti. You can apply litlle oil in palm so that the dough doesn't stick to palm. Then transfer it to hot girdle .Apply ghee and cook both sides like we do parathas.

           Upputu,Puran Poli,Boli is ready !!
