Coriander Chutney

 Coriander Chutney

( coriander thokku)

Hi all,

Today sharing a recipe I learnt from my mother.A very traditional South Indian  chutney/thokku recipe mostly prepared during winter season with the abundance of fresh coriander leaves. You can use this chutney as accompaniment to eat chappatis, dosa or even with rice.It was a chutney my mother prepared every winter season. The spicy ,freshly ground coriander is very flavourful and tasty.

INGREDIENTS

Fresh coriander leaves- a big bunch

Bengal gram / Chana dal -2 tbsp

Split Black gram /Urad dal -2 tbsp

Red chillies -6-7  ( as per your spice taste)

Asafoetida/ Hing - a pinch

Mustard seeds/ sarson - 2 tsp

Oil - 4 - 5 tbsp

Step by step recipe

Heat 2 tsp oil and add hing, dals and dry roast the dals till light brown .

Roast dry chillies .

Keep aside.

Add cleaned and dried coriander leaves in hot pan and just stir sometime without changing its colour.

Then blend all above ingredients with a small  piece of tamarind and salt to taste.

Sprinkle little water to bring all together.

Heat 1 tbsp oil and add mustard seeds.Once they crackle add the blended paste and cook for two - three minutes.

Once cooled store in a jar .

You can store this for a month if stored properly with enough oil, by keeping in the sun and mixing time to time.

You can otherwise store in fridge and use a clean spoon everytime.

It will substitute for a pickle .

Coriander chutney / thokku is ready to be served with rice, dosa, chappatis.
