AALOO MASALA /POTATO MASALA




                                       


Hi friends,
Its once again festive time of year and most of the households prepare simple vegetarian fare that too sans onion and garlic .In this post I am sharing one such recipe made with versatile potatoes.Hope you like it .




Ingredients

Baby potatoes /Large potatoes -300 g
Tomatoes-2
Green chillies-3-4
Spices-
Kashmiri Red chilli powder-1/2 tsp
Turmeric-1/2 tsp
Dhaniya powder-1 tsp
Garam masala-1/2 tsp
Jeera powder-1/2 tsp
Chat masala-1/2 tsp
Curry leaves-as needed
Coriander leaves -to garnish
Water as needed
Salt as needed







Whole spices-
Crushed black pepper-4-5
Whole red chilli-2
Black cardamon-1
Bay leaf -1
Green cardamon-2
Cinnamon stick-1
Cumin-1 tsp
Dry ginger powder-1 tsp








                                               


                               

                                        Boil potatoes and prick them with fork and keep aside.

                                                 
                                         
                                                   



                                         

                                                 Grind tomatoes and green chillies in a grinder.





 Heat oil in a kadai /vessel.Add cumin, 1 bay leaf ,1 cinnamon stick,1black cardamon,2 small green cardamon,2 whole red chillies,crushed pepper and dry ginger powder .Saute all for a minute or two.


Then add tomato and chillies mixture and saute well.




                                        Whem masal is cooked well add boiled potatoes .


Mix well.




Add salt.

                                                   

                                                        Mix well and cook with lid closed.



                     
                         After five minutes open lid and add water .Mix well and cook with lid closed.






                       
After five minutes when water comes to boil and all masala is well incorporated then add 1 tsp of Garam masala and 1 tsp of chat masala.Mix well and cook for two to three minutes.







Aloo masala is ready .Add coriander leaves.






Serve this hot and spicy Potato /Aaloo masalasa  alongside roti,puri or rice varieties.

ASPARAGUS BEANS/BARBATTI SABZI /PORIYAL Preparation Time-10 min Cooking Time -10 -15 min Ingredients Long beans/Asparagus beans/ Barbatti-250 g Dry red chillies-2 Mustard seeds-1 tsp White urad dal-1 tsp Turmeric-a pinch Hing-a pinch Salt-to taste Water-4 tbs Oil-2 tps Coconut-to garnish Process 1) Firstly wash and then finely chop the beans. 2) Heat oil in kadai .After it heats add mustard seeds ,urad dal,red chillies,hing.Saute for half a minute. 3) Add chopped  asparagus beans ,little water and mix well. 4) Add  salt to taste and cover it to cook in steam. 5) Cover the kadai to let the sabzi cook in steam. 6) Keep checking inbetween  to see that the veggies are soft and cooked . 7) Cook for few minutes till the water is soaked .Keep stirring in between. 8) Our sabzi is ready .We can garnish with coconut . 9) Asparagus beans /Barbatti is ready to be eaten with rice,sambar or with dal and roti
