THEKUA /KHAJUR/THIKARI/WHOLEWHEAT COOKIES


               


'Thekua' is the traditional recipe of Bihar,Jharkhand situated in Eastern part of our country India.It is a sweet dish  offered to God during their festival 'Chhath Puja'.I love this recipe very much .This sweet dish can be prepared with jaggery and sugar both .Today I will be sharing the sugar version of this recipe.It will serve as an afterschool snacks for kids .It tastes like  biscuit which you can serve as evening snacks too.Hope you will like it.


Preparation time -25-30 min
Cooking time-6-7 min (per batch)


INGREDIENTS
WHOLEWHEAT FLOUR /ATTA -1 CUP
POWDERED SUGAR -1/2 CUP
SEMOLINA /SOOJI -1/4 CUP
FENNEL SEEDS / SAUNF -1 TSP
CARDAMON PODS -2
CLARIFIED BUTTER /GHEE -1 SMALL BOWL(4-5 TBSP)
WATER -AS REQUIRED
SCRAPED COCONUT -2 TBSP


Wholewheat flour/powdered sugar/semolina


Fennel seeds /crushed cardamon 


Clarified butter /Ghee 

Scraped coconut 

                 

                                          Take wholewheat flour.semolina,ghee in a bowl.




                              Crumble well with hands.You must be able to bind the dough together.



Now add coconut ,powdered sugar,crushed cardamon and fennel seeds.




Add little water to make a firm dough.


                                       


                                           Rest  the dough for 10-15 minutes.


 Take a portion from dough .Press against the mould to get designs.You can use basket to get designs otherwise you can simply flatten them .












Deep fry in oil till brown and crispy both sides .Keep the gas in low flame .Handle carefully while turning sides in oil as thekuas /cookies would be soft .

                                                 







Thekuas would have crispy outer covering but it would be  soft inside.When hot they would  be soft  but as it they cool they will harden.After they cool store in airtight containers.It will stay good for more than a week.

Sweet Pongal

SHAKKARPONGAL / SWEET PONGAL Good day friends , I prepared Shakkarapongal / sweet pongal.A South Indian delicious sweet dish most importantly prepared during Pongal.Its also prepared as prasadam /prasad on special occasions at every South Indian homes and temples.It is one of my most favourite dish.I even don't mind standing in queue to get sweet pongal as prasadam in temples.
