VEGETABLE CUTLET

Vegetable Cutlet / Vegetable Chop





                                                 







One of the famous street food in eastern part of India like Kolkatta , Jharkhand Vegetable cutlet or vegetable chop  is made with carrots,beetroot and potatoes.The cutlets getting the red hue because of the strong beetroot colour.In some cases the cutlets are rolled over egg batter but in my veg kitchen I rolled it in a batter prepared with maida and cornflour.Hope you will like it .



INGREDIENTS
Carrots -2
Beetroots -3
Boiled potatoes -3
Green Chillies -2
Peanuts -1 tbsp
Coriander leaves - a handful
Oil -1 tbsp +for deep frying.
Cornflour -1 tbsp
Maida- tbsp
Cumin seeds
Coriander powder -1 tsp
Red Chilli Powder -1 tsp
Water - as needed
Salt - to taste

Step by Step Process With Pictures-:

Grate carrots and beetroots.Chop peanuts to small pieces and chop green chillies and coriander too.






Now in a kadai heat oil add cumin seeds/jeera.
After it crackles add peanuts and green chillies.




  
Then add grated beetroots and carrots.


  Add coriander powder,chilli powder.Mix well.Cook for four to five minutes.



 Add boiled and mashed potatoes and salt to taste. Add coriander leaves.



Vegetable mixture for cutlet ready.After it cools make shapes of cutlets.



  Now to prepare a slurry we take 1 tbsp plain flour and cornflour and a pinch of salt.Make a thin batter.




Prepare breadcrumbs by grinding few bread slices in mixie grinder.


 
Now dip prepared cutlets in maida batter and roll it with breadcrumbs.





Now deep fry in oil in medium flame .As vegetable mixture is already cooked just fry to get that brownish,crispy outer covering. Handle carefully as the cutlets are soft .




Vegetable cutlet is ready.


If you do not want to deep fry cutlets you can also shallow fry them..Make patties out of vegetable mixture.


  Dust them with cornflour and shallow fry them with little oil in non-stick pan.



  Serve with tomato sauce or chutney of your choice.

Sweet Pongal

SHAKKARPONGAL / SWEET PONGAL Good day friends , I prepared Shakkarapongal / sweet pongal.A South Indian delicious sweet dish most importantly prepared during Pongal.Its also prepared as prasadam /prasad on special occasions at every South Indian homes and temples.It is one of my most favourite dish.I even don't mind standing in queue to get sweet pongal as prasadam in temples.
